Ingredients (4 persons):
700g (Adriatic) fish
100g red peppers
100g zucchini
100g asparagus
100g celery
500g parsley root
1l cream
salt, pepper
Recipe:
Clean the fish and cut off the filet from the bones.
Clean vegetables and make stripes.
Fill the filet with vegetables, roll it and fix it with toothpick.
Clean and chop the parsley root and cook it in the cream for 10 minutes.
Mix the parsley root and prepare smooth mousse.
Steam the fish for 3-4 minutes over the boiling water.
Serve fish over the mousse and splash with olive oil.
