
Silvio Nickol is one of the high flyers of the last years. After years with 3*** Michelin Chefs such as Heinz Winkler and Harald Wohlfahrt he made his debut as Chef de Cuisine in the Restaurant Schlossstern at Capella Schlosshotel Velden at lake Wörthersee in Austria. At this idyllic place, well known via the German TV cult series “Ein Schloss am Wörthersee”, Chef Silvio pampers his guests with an ultimate food experience and was awarded for this with 2** Michelin and now 18/20 points Gault Millau.
At the day we visited Chef Silvio there was a Gourmet Festival under Patronage of Chef Eckart Witzigmann happening with guest Chef from Vienna, Mrs. Kim Sohyi.
We dressed up with our Chefs jackets and assisted Chef Silvio in the preparation for the evening. To explain the whole menu with all its tricks to preparing it would boost this report. The recepies and decoration could even fill a book. Full of motivation and fun the team cooked with guests and friends and it was an honour to be a part of it.
Chef Silvio remains to be a very earth based and great character and treated all involved people with highly respect and as a friend.
From the culinary side this was the ultimate highlight so far and will not to be topped the next ten months.
Amazing to be allowed to cook on such a high end level.
